Wild Thyme Summer Salad Recipe

  Ingredients

  • 3 cups cooked rice
  • 2 boneless, skinless Chicken breasts, cooked and cut into 1-inch cubes
  • 1 8 1/2-ounce jar sun-dried tomatoes, drained and chopped
  • 1/3 cup chopped Kalamata * 1/2 cup prepared vinaigrette
  • 1/4 cup chopped thyme leaves
  • 1 teaspoon oregano
  • 1 teaspoon prepared horseradish
  • 1/4 teaspoon ground black pepper
  • 1 pound peeled and deveined Shrimp
  • 3 cups hot cooked rice
  • grated Parmesan cheese (optional)
  • 1/2 teaspoon salt
  • 1/8 teaspoon ground white pepper
  • 1/4 teaspoon ground nutmeg
  • 1 cup shredded Swiss cheese, divided
  • 1/4 cup dry white wine
  • 1/4 teaspoon ground white pepper
Directions

  1. In a large bowl, combine rice, Chicken, tomatoes, vinaigrette, and thyme. Toss well.
