Fusilli and Zucchini Recipe
- 400g of pasta (fusilli shape)
- 4 zucchini
- 1 tablespoon butter
- 1 small onion, minced
- 1 clove garlic, minced
- 1 spoon fresh mint, minced
- ½ cup grated Parmesan cheese
- ¼ cup milk
- ¼ teaspoon ground white pepper
- 50 g of pine nuts
- Melt butter in large skillet over medium-low heat.
- Add onion, cook 2 minutes.
- Add garlic; cook 1 minute longer.
- Stir in zucchini and mint; cook 4 minutes longer.
- Stir cooked rice into zucchini mixture.
- Add cheese, milk, pepper and pepper sauce.
