Fusilli and Zucchini Recipe


Ingredients 

  • 400g of pasta (fusilli shape)
  • 4 zucchini
  • 1 tablespoon butter
  • 1 small onion, minced
  • 1 clove garlic, minced
  • 1 spoon fresh mint, minced
  • ½ cup grated Parmesan cheese
  • ¼ cup milk
  • ¼ teaspoon ground white pepper
  • 50 g of pine nuts

  Directions 

  1. Melt butter in large skillet over medium-low heat.
  2. Add onion, cook 2 minutes.
  3. Add garlic; cook 1 minute longer.
  4. Stir in zucchini and mint; cook 4 minutes longer.
  5. Stir cooked rice into zucchini mixture.
  6. Add cheese, milk, pepper and pepper sauce.
